Fatty acids comprise some of the most essential nutrients in the human diet, critical for cell membrane structure and function for local “ hormonal” signaling. Essential fatty acids are transformed into local hormone mediators called eicosanoids that regulate all stages of inflammation. This process is vital to the ability of the body’s immune system to repair and protect itself. Fatty acid imbalances can be a causative factor in a variety of chronic health conditions.
